Sodium benzoate, also known as sodium benzoate, is an organic matter, chemical formula C7H5NaO2, is a white particle or crystal powder, odorless or microbenzoate odor, taste slightly sweet, astringent taste, relative molecular weight of 144.12, stable in air, soluble in water, its aqueous solution PH value is 8, soluble in ethanol Benzoic acid and its salts are broad-spectrum antimicrobial reagents, but their antibacterial effectiveness depends on the PH value of food. With the increase of the acidity of the medium, its bactericidal and antibacterial effect increases, but loses its bactericidal and antibacterial effect in alkaline medium. The optimal PH value of anti-corrosion is 2.5~4.0
