Xanthan gum is a light yellow to white flowing powder with a slight odor. Soluble in cold and hot water, neutral solution, resistant to freezing and thawing, insoluble in ethanol. Disperse in water and emulsify into a stable hydrophilic viscous colloid.

Xanthan gum is also called the cement, han raw rubber, the yellow cell polysaccharide, is a kind of the fake huang of fermentation to produce single spore bacterium polysaccharide, due to its special structure of macromolecules and colloids, and has a variety of functions, can be used as emulsifier, stabilizer, gel thickeners, infiltration agent, film forming agent, etc., widely used in the national economy in various fields. Xanthan gum, known as "industrial monosodium glutamate", is a kind of microbial polysaccharide with large production scale and wide application in the world.
Japan in 1985, xanthan gum is the most effective anticancer agent in the comparative test of eleven food additives.
Xanthan gum is added to many foods as stabilizer, emulsifier, suspending agent, thickener and processing assistant.
