       Xanthan gum is a light yellow to white flowing powder with a slight odor.  Soluble in cold and hot water,                      neutral solution, resistant to freezing and thawing, insoluble in ethanol.  Disperse in water and emulsify   
     into a stable hydrophilic viscous colloid.
